My grandmother made this cake every year before Christmas and I’m quite sad that she’s not around anymore to taste mine as this was the first time I ever made this cake. It’s called Ulmer in German and in English you could call it Allspice Cake or German Christmas Cake, although it’s not like the English Christmas Cake as it has no dried fruits in and is really totally different 😉
625g of flour
250g brown sugar
100g chopped hazelnuts
50g ground almonds
3tsp. ground mixed spice
3tsp. ground allspice
3 tbsp. cinnamon
1 tsp instant coffee
½ tsp. ground cloves
3 tbsp. cocoa
6 tsp. baking powder
1 cup cold coffee
Whisk the eggs, butter and sugar until fluffy, then gradually add the rest of the ingredients with flour and baking powder so that at the end you have a gooey dough.
Put in a with baking paper lined tray and bake in a preheated oven at 200 C° for about 20 minutes.
Check with a wooden stick if it’s all baked through.
Then glaze with frosting (icing sugar and some lemon juice or rum which was my grandmother’s way of making icing!) and decorate with sprinkles.
Once the cake is cold cut into diamond shapes.
